Vietnamese wheat noodle

This is the local dish in Northern Vietnam. People in Northern Vietnam eat it for breakfast. We can eat it at food truck all day long.
@ Ingredients(for 5 people)
Beef bones: 1.5kg Fibrous meat: 200g
Chuck and brisket: 500g Pho( Vietnamese noodle):400-500g
Red onion: Quarter Ginger: 50g
Onion: 1 Green onion: Half
Vietnamese sauce: 50ml to 100ml Lemon: One
Chili pepper: 2 Been sprout: 2
Salt: 2-3 table spoon Sugar: 1 tea spoon
Ajinomoto: 1 tea spoon Pepper: little bit
Star anise: 5g Cinnamon: 5g
Cardamom: 3g Cilantro leaf: 2g
Clove: 2g Mandarin orange leaf peel: Half
@ Preparation
1,Cut out the fat of beef bones. Put the bones into the boiled water for 2 minutes and take bones out.
2,Cut fibrous meat in the length of 2cm. Wash fibrous meat, chuck and brisket with the water of No.1.
3,Bake washed red onion and ginger with peel.

@ How to make
Glaze of pho

1, Put red onion, ginger, beef bones, fibrous meat and chuck and brisket into the 3-3.5l boiled water of pan. Simmer it for 40 minutes.
2,If the spices are powder, put star anise, cinnamon, cardamom, cilantro leaf, clove and mandarin orange peel in the tea strainer bag. Put the bag into the water of No.1 and simmer it for 10 minutes.
If the spices are original form, bake star anise, cinnamon, cilantro leaf and clove. After that, put them in the tea strainer bag with mandarin orange peel Put the Bag into to the water of No.1.
3,After strain No.2, put Vietnamese sauce, salt, sugar, Ajinomoto and put out the fire.

Ingredients

1,Take fibrous meat and chuck and brisket out of pan. Slice chuck and brisket.
2,Slice lemon in wedges
3,Blanch been sprout and put in bamboo basket
4,Slice onion and put in ice water
5,Slice green onion leaving white roots
6,Cut chili pepper in small pieces
7,Boil washed pho. Put pho in bamboo basket and wash it.

How to arrange on dish

1,Put pho of 80-100g into the bowl. Warm bowl with the hot water. Vietnamese wheat noodle
2,On pho, put chuck and brisket, fibrous meet, onion, green onion and little bit pepper.
3,Put the white roots of green onion in the pan of pho soup. When it gets soft, put it and soup on No.2
4,Squeeze on No.3 at dining table. Put chili pepper and been sprout if you like.
5,If you feel seasoning light, put Vietnamese sauce on No.4

*You can make rare beef pho if you put sliced beef on every ingredients in the bowl and sauce the soup of pho.
