(Indonesian Style Roast Chicken)

Hi, I'm the owner/chef of an Indonesian restaurant in Japan. I'd like lot's of people to enjoy Indonesian foods.
@ Ingredients (for 4 people)
400grams of chicken (4 pieces of boneless breast or thigh)
10grams leek
1/8 of a lemon
Sauce A
280grams soya sauce
80grams brown sugar
160grams sugar
10grams minced ginger
10grams minced garlic
Sauce B
10grams lemon grass
2 leaves of baimacro (mandarin/tangerine leaves)
1grams salt
5grams monosodium glutinate
Coriander
2grams nutmeg
Tabasco
@ How to make
1,Put shallow slices through the chicken pieces with a knife so that the heat will pass through quickly. Ayam Panggang
2,Slice the lemon grass into strips.
3,Deep fly the chicken in salad oil (180 degrees Celsius). Drain and put aside.
4,Put the ingredients for sauceA into a sauce pan and heat gently. When the brown sugar has disolved, add ingredients from sauce B. Bring to the boil.
5,Put chicken pieces into the sauce and stir for one minute.
6,Serve the chicken pieces with some sauce and leeks sprinkled over the top.
