Arroz caldoso

Arroz caldoso is one of the Spanish dishes using rice. It is my idea to put a small octopus in that dish (I was a managing chef). This dish also goes with fish, meat, vegetables etc. I hope you enjoy this Spanish meal!
@ Ingredients(for 3 people)
2 Carrots 1 Onion
Head of Celery 500g of small octopus
2 pieces of Garlic 400g of Tomato puree
3/4 cup of sherry wine 1/4 cup of red wine
Dash of flat-leaf parsley Dash of olive oil
Dash of salt Pepper (Half of small spoon)
Oregano (1 small spoon) Laurel (1 small spoon)
1 cup of rice
@How to make
1,Wash the rice and drain it. Arroz caldoso
2,Chop vegetables in fine pieces.
3,Put the adequate quantity of olive oil in the pan, and fry onion. Add celery, carrots, garlic, flat-leaf parsley, small octopus, too. After that, add tomato puree, sherry wine, red wine, seasoning. Boil it for one and half hours at low heat.
4,Prepare another pan with heated oil, and fry rice.
5,Boil two cups of water.
6, Add the sauce you made at no3 to rice. And boil for 20 minutes adding hot water of no5. Try the taste, and add a salt, lemon, lime if you like.
